Babeczki cytrynowe z kremem z kwiatu czarnego bzu

Upcoming wedding of my best friend inspired me to do something really special. So the first thing I thought of  was Royal Wedding Cake flavors. A combination of lemon and elderflower sounded genius. And then I decided that will be it! And that’s how Lemon cupcakes with elderflower butter cream has been made up.

You’ll need

Lemon cupcakes


100 g of eggs

120 g of butter

140 g of buttermilk

7 g of baking powder

170 g of flour

120 g of sugar

grated lemon skin


First preheat the oven to 180 °C.

Next mix sugar and butter until you get a fluffy cream. Keep adding eggs, one by one, until all ingredients are well combined.

Mix flour and baking powder in a separate bowl.

Next start adding flour mix spoon by spoon. When your dough is smooth, add buttermilk and mix all until it’s combined.

Prepare baking form for muffins and cover the holes with cupcakes cases. When that’s ready, put the dough to each muffin case so it’s filed in 3 quarters.

Put the baking form to the oven and bake muffins for about 20 minutes or until the toothpick is dry.

After that time remove the cupcakes from the oven and leave to complete cooldown.

In a meantime prepare a butter cream.

Elderflower butter cream


200 g of butter

250 g of mascarpone

2 teaspoons of elderflower syrup

40 g of powdered sugar


At the beginning whip butter with powdered sugar until you get a fluffy cream. Next keep adding mascarpone cheese spoon by spoon. And at the end (while mixing all the time) add elderflower syrup.

Mix it all for a while, until you get all ingredients combined.

Next put the butter cream to a pastry bug with choosen ending and decorate your muffins.

You can decorate your muffins on the top with whatever you’d like or you can do it as I did and choose the Duplo candy bar.
