Spinach – this green vegetable has followers and opponents. I meet both the ones that could it eat everyday and those who cannot even look at it. But one is certain, it’s properties and color are overwhelming. Let me show you what I did with this awesome vegetable!
Forest cake, also know as forest moss cake, can be prepared on many ways. Actually, it’s only your imagination that limits you. In my version of this cake I prepared a spinach sponge cake with strawberry mousse and whipped cream.
Green sponge cake
200 g of eggs
220 g of sugar
135 g of vegetable oil
270 g of flour
11 g of baking powder
2 g of baking soda
400 g of frozen spinach
Red currant (for decoration)
Defrost the spinach on low eat to make it smooth and without water. Leave it to cool down.
Preheat the oven to 170°C.
In a mixer combine eggs and sugar on the highest rounds. Next on low rounds add oil.
In a separate bowl combine flour, baking powder and baking soda together.
Add spinach to the eggs and combine all. Next add flour mixture and mix until all is smooth.
Put the baking paper on baking tray (23 cm diameter) and put the cake mixture into it. Bake for around 40 minutes or until toothpick is dry.
After the cake is bake, leave to cool down completely and then but it in half and remove the top part (leave it for cake decoration) so you have to flat cake tops.
500 g of strawberries (I used the fresh ones)
15 g of powdered sugar
15 g of gelatine
Put the strawberries and powdered sugar in the blender and mix until it’s smooth and combined. Soak the gelatine in a little portion of water and leave it for 10 minutes. Then heat the gelatine on small heat so it only melts. Then add it to strawberry mousse and combine all very precisely. Leave in a fridge to concentrate a bit.
Whipped cream with mascarpone
400 ml of 30% cream
250 g of mascarpone
30 g of powdered sugar
Whip the cream with powdered sugar on high speed and then on low speed add mascarpone spoon by spoon. Combine everything precisely.
Composing the dessert
Put the first cake top to the baking tray and add a layer of strawberry mousse. Next add a layer of whipped cream using a pastry bag. Next put the cake top and cover it with whipped cream. Decorate the cake with crumbs and red currants.
Your cake is ready!
