Plums season has knocked on my door and form this moment I got like five kilograms of plums at home. Of course you can prepare a stewed fruit from them, but I wanted more. And I figured out that I’ll prepare a plums pie, the easiest and the quickest you can imagine. Let’s see how this turned out!
Shortbread cake (prepare it from this recipe)
0.5 kg of plums
5 g of ground cinnamon
20 g of brown sugar
To prepare plums pie, you first need to cover baking tray with baking paper. You can also use a silicone form, and in this case you can skip the baking paper part. Next prepare a shortbread dough. After it’s ready and smooth roll it out so it has a round shape and cover baking tray/silicone form with the dough. Put the form to the refrigerator for minimum 1h.
In a meantime prepare plums by cutting them in half and removing the seeds.
When plums will be ready, preheat the oven to 180°C.
Next, take out the dough from the refrigerator and do little holes in the bottom of it using a fork. Make sure the holes are reaching the baking tray/silicone form bottom. It will make no bubbles on cake while baking.
On the dough put all the plums halfs. I was putting them in circles. Sprinkle whole cake with brown sugar and cinnamon. Next put it to the heated oven and bake for about 30 minutes or more, until the cake on the sides is fully gold.
When your pie will be ready, take it out from the oven and leave to cool down completely.
The plums pie tastes ideally with a cup of coffee or green tea.
