Salted caramel became very popular during last few years. I loved it few years ago as well when I ate salted caramel ice cream. If you’d like to prepare a dessert that is basing on salted caramel you have to first prepare the caramel sauce which can be salted or just plain one with a bit of vanilla. You can store in a glass container in refrigerator for about few months as well as in a freezer.
Salted caramel sauce
250 g of sugar
75 g of water
55 g of butter
265 g of 30% cream
4 g of salt (optionally)
paste or extract of vanilla
Put the sugar and water on a pan an stir before heating. Next put on a low heat and boil until sugar syrup will be amber. Remember to NOT stir the syrup while it’s boiling.
Next, take the syrup out of the heat and add butter. Mix until butter is fully melted. Then put again on the heat and slowly pour the cream. While doing this you need to be very careful as it will definitely bubble up.
Caramel should boil few minutes. You can stir it from time to time.
When it will be done, then you can turn off the heat and add vanilla and salt (if you want to caramel to be salted).
Ready sauce put to the glass container and let it completely cool down. After that time close the container and put into a freezer or refrigerator. Sauce can be there for few months.
I used my salted caramel sauce to decorate few of my desserts(shortbread cookies and gingerbread cubes).
